Vegetable Soup Recipe – A Mushroom Soup

500g (1lb mushrooms)

1 garlic clove

2 chopped onions

90g (3oz) butter

Two tablespoons of flour

one litre (1 and a half pints) chicken stock

One half a cup cream

One bay leaf

One sprig of thyme

This’s among the quicker to prepare mushroom soup dishes that will take around 20 – 25 minutes to cook.

Step 1: Wash your mushrooms and slice them up (they don’t have to look pretty!) Get a huge utensil and then cut the garlic clove, chop up the onions. Purchase a huge pan and put in the butter. Take your chicken stock and put it within the pan, bringing to the boil. As soon as boiling, add the bay leaves as well as start to simmer. Leave this for ten minutes. As soon as done, take away the bay leaves and thyme and make use of a hand blender to puree the soup.
