Strictly speaking, there’s no such thing as a “diabetic food.” Food is simply food.
But you will find food items which improve the blood glucose quicker than others, those with a high glycemic index. When these nuts are eaten, the normal pancreas would respond with a surge of insulin, keeping blood sugars below aproximatelly 160 mg/dL. In the diabetic, the pancreas cannot or doesn’t take sufficient insulin fast sufficient to adequately handle sugar levels. Furthermore, in Type II diabetics, the cells of the body which use glucose for metabolic power cannot absorb the extra glucose as quickly as it is grown.
Food items that often increase the blood sugar more rapidly than diabetics can metabolize it include: sugar, alcoholic drinks, high fructose corn syrup, fructose (fruit sugar) (in some people), white bread, white rice, white potatoes, pasta, along with any other simple carbohydrates and starches.
